It's Monday, and while I realize that the majority of you may be grilling out and basking in the holiday sun, over here at the Cole residence, it is business like usual. Monday, back to work and back to reality after a nice Sunday off.
Since I usually cook such a large meal every Sunday, come Monday I am not in the mood to be slaving over the stove in my kitchen. I feel as if salmon is the perfect easy, go to meal and besides, it is good for you too!
Ever since my sister caught a 50 pound king salmon when we visited Alaska over 14 years ago, I have been hooked on this meaty fish. You either love it, or you hate it and as many of you know the hubby isn't too fond of this fish. Except when I prepared it in parchment paper and this simple recipe as well, he actually asks for it now. Enjoy!
Ingredients
2 Salmon Fillets
Salt and Pepper
1/2 container of creme fraiche
Directions
1. Preheat oven to 350 degrees
2. Put the fillets in a baking dish and season salmon fillets with salt and pepper
3. Brush the creme fraiche over the fillets and place in the oven for 20-25 minutes or until it reaches desired doneness.


This looks delish and I love the short recipe list (not to mention that it includes creme fraiche, yum) This is perfect for week night meals!

I luv salmon and try to include it in dinner at least once a week. Great use of the creme fraiche, I will definitely be trying this.
